When I was growing up my mum and dad worked and I was brought up by my gran and granddad. My Gran taught us how to waste as little as possible when it came to food. It is, I think, becoming a lost art with the amount of food being thrown away increasing. Of course we can’t eat banana skins or apple cores, but baking is a great way of using up fruits (and veg) that have seen better days. I sometimes think the wife deliberately leaves a banana or two in the fruit bowl to over ripen, just so I will make banana bread- just saying!
My cherry crumble cake recipe can be tweaked to use over ripe raspberries, blueberries, blackberries, apples etc.
