I had the pleasure of judging a baking competition at University of Birmingham LGBTQ group a few weeks ago. One of the categories was comprised of vegan bakes.
Although, I am not Vegan, I was thoroughly impressed with the submissions for this category (not least of all, because the omission/substitution of butter and eggs to cake can compromise the taste and texture in a cake). One cake was so good, I questioned whether the entrant had mistakenly entered her bake into the wrong category.
I have tried the recipe for myself (tweaked it a little to make it my own) and am pleased to say, it makes it into my recipes page.
