Sausage Breakfast Casserole
This recipe makes 6 mini breakfast casseroles, but ingredients can be doubled if you are looking to feed a crowd.
My son is absolutely spoiled because I make him a hot breakfast every morning. Of course, I don’t have time to make breakfast from scratch every day. That’s where this casserole comes in handy. It can be stored in the refrigerator and microwaved each morning.
Ingredients
- 6 eggs
- 1 cup cheddar cheese, shredded
- 1/2 pound ground breakfast sausage
- 1 jalapeño, chopped
- Salt and pepper, to taste
- Sausage Breakfast Casserole is a filling dish that is perfect for starting off your morning. It can be made ahead and ready to baked when you wake up.
Instructions
- In a skillet, cook the the breakfast sausage until browned.
- In a large bowl combine the eggs, cheese, jalapeño, sausage and salt & pepper.
- Mix until well combined.
- Place mixture into muffin pan.
- Bake at 400 for 12-15 minutes or until done.
