Keto Curry Cauliflower Rice
This cauliflower rice reheats beautifully in the microwave, so use it in your next meal prep. Just store it in a sealed container in the refrigerator for up to 3 days.
In fact, you can create a filling and complete meal just by adding a few ingredients to it! Buy some pre-made rotisserie chicken, shred it up, and divide it into meal prep containers with the curry rice.
Ingredients
- 4 cups Cauliflower Rice
- 1/2 Red Bell Pepper chopped
- 1/2 Green Bell Pepper chopped
- 2 tbsp Olive Oil
- 1/2 tsp Garlic minced
- 1/2 tsp Onion Powder
- 1 tsp Paprika
- 2 tsp Curry Powder
Instructions
- In a large skillet, begin to heat olive oil.
- Add chopped bell peppers & minced garlic. Continue to saute until tender.
- Add frozen cauliflower. Continue to cook until liquid is cooked off.
- Add dry ingredients and stir well. Cook for another 2-3 minutes.
- Remove and garnish with salt, pepper and fresh cilantro or parsley.
