Keto Pecan Pie Muffins (Grain Free, Low Carb, Sugar Free)
INGREDIENTS
- 1 1/4 cup blanched almond flour
- 2 tablespoon Coconut flour
- 2 tablespoon granulated sweetener
- 1/8 teaspoon Salt
- 1 teaspoon Baking Powder
- 2 large Eggs
- 5 tablespoon melted butter
- 2 tablespoon sugar free maple syrup
- 1/4 cup chopped pecans
- 1/4 teaspoon liquid stevia or liquid monk fruit
- 1/2 teaspoon maple extract
INSTRUCTIONS
- Preheat oven to 325ºF or if you don't have that setting go down to 300ºF
- combine dry ingredients of almond flour, coconut flour, granulated sweetener, baking powder and salt
- mix wet ingredients eggs, melted butter, liquid stevia, maple extract and sugar free maple syrup
- combine both and after add in 1/4 cup of chopped pecans. You can even add pecans as a crust along the top
- divide in 7 muffin cups and bake for about 20 minutes or until done. Can be tested by sticking a toothpick through center. If toothpick comes out clean muffins are done.
