Keto Crockpot Chicken Thighs With Lemon & Garlic
I’ve always been a huge fan on bone-in chicken thighs. They are crazy cheap to buy, easy to cook, and thanks to the bone in them, pack so much more flavor than boneless chicken thighs or chicken breast.
This easy slow cooker chicken thighs recipe only requires about 15 minutes of prep time and 4-6 hours of slow cooking time and always comes out super juicy.
Ingredients
- 4 chicken thighs bone-in, skin-on (cutlets)
- 1 tsp paprika
- 1 tsp thyme
- 2 tsp salt
- 1 tsp pepper
- 1 tbsp of olive oil for frying
- 6 cloves of garlic crushed
- 1 tbsp lemon zest
- 1/2 cup fresh lemon juice
- 1 cup of water
Instructions
- Mix together paprika, thyme, salt, and pepper.
- Wash the chicken thigh cutlets under cold running water and pat dry with a paper towel. Cover them in the dry spice rub.
- Heat the oil in a pan over high heat. Add in the marinated chicken thighs with skin side down and cook for 6 minutes on each side until browned and crispy. Add them right into the crockpot with skin side up.
- Lower the pan to medium and cook the crushed garlic for 2 minutes until fragrant. Add garlic to your crockpot.
- Add in 1 cup of water, freshly grated lemon zest and lemon juice and set it to cook on low for 4-6 hours.
