Keto Tuscan Chicken and Asparagus
Keto Tuscan Chicken with Asparagus is an easy one pan low carb meal! Packed with seasoned chicken, tender asparagus and a rich parmesan cream sauce this will be a new family favorite!
Ingredients
- 1 tablespoon butter
- 1.5 pounds chicken, cubed
- 1/2 cup italian dressing
- 2 cups asparagus chopped, woody ends removed
- 1/3 cup broth (vegetable or chicken)
- 1/2 cup heavy cream
- 1/2 cup parmesan
- 3 cloves garlic
- salt and pepper to taste
Instructions
- Marinate the cubed chicken in the Italian dressing for at least one our before cooking or up to 24 hours.
- Preheat oven to 350 degrees.
- Heat a large oven proof skillet to medium heat, add butter and chicken, discard the marinade.
- Allow the chicken to brown 4-5 minutes on each side.
- Wait to stir the chicken until it is nicely browned.
- When the chicken is browned and the moisture has cooked off add the chopped asparagus, garlic, broth, heavy cream, parmesan, salt and pepper to taste. Stir well.
- Cover the skillet and bake for 20 minutes at 350 degrees.
- Garnish with fresh tomatoes, basil and additional parmesan if desired.
