Keto Tuscan Chicken and Asparagus

 Keto Tuscan Chicken with Asparagus is an easy one pan low carb meal! Packed with seasoned chicken, tender asparagus and a rich parmesan cream sauce this will be a new family favorite!

Ingredients

  • 1 tablespoon butter
  • 1.5 pounds chicken, cubed
  • 1/2 cup italian dressing
  • 2 cups asparagus chopped, woody ends removed
  • 1/3 cup broth (vegetable or chicken)
  • 1/2 cup heavy cream
  • 1/2 cup parmesan
  • 3 cloves garlic
  • salt and pepper to taste

Instructions

  • Marinate the cubed chicken in the Italian dressing for at least one our before cooking or up to 24 hours.
  • Preheat oven to 350 degrees.
  • Heat a large oven proof skillet to medium heat, add butter and chicken, discard the marinade.
  • Allow the chicken to brown 4-5 minutes on each side.
  • Wait to stir the chicken until it is nicely browned. 
  • When the chicken is browned and the moisture has cooked off add the chopped asparagus, garlic, broth, heavy cream, parmesan, salt and pepper to taste. Stir well.
  • Cover the skillet and bake for 20 minutes at 350 degrees.
  • Garnish with fresh tomatoes, basil and additional parmesan if desired.
