Low-Carb Cilantro Lime Salmon Skewers
Ingredients
- 3 Salmon Fillets
- 1 tsp Cumin
- 1 tsp Paprika
- 1/2 tsp Garlic Salt
- 1 tsp Minced Garlic
- Lime Juice from one lime
- 1/4 cup Fresh Cilantro minced
- 5.3 ounces Greek Yogurt plain
Instructions
- In a small bowl, stir together cumin, smoked paprika, garlic salt and pepper.
- Cut salmon into 1 inch cubes. Toss with the dry rub.
- Skewer the seasoned salmon; 4-5 on each skewer.
- Depending on how you are cooking the skewers (grill, skillet, or nonstick griddle), cook for approximately 7-9 minutes, turning occasionally to sear all the sides of the salmon. **I cooked mine on a nonstick griddle.**
- While the salmon is cooking, stir together yogurt, minced garlic, fresh cilantro and lime juice.
- Once the salmon is cooked to your preference, remove from heat and drizzle with yogurt sauce.
