GREEK CHICKEN SALAD

INGREDIENTS
- 3 cups rotisserie chicken
- 1½ cups cucumber peeled and diced
- 1½ cups grape tomatoes chopped
- ½ cup red onion diced
- Dressing
- 1 cup plain Greek yogurt
- 1 lemon juiced
- 2 cloves garlic minced
- 2-3 tbsp fresh dill divided
- salt & pepper to taste
INSTRUCTIONS
- Remove the skin from the rotisserie chicken and shred using your hands and add to a large bowl.
- In a small bowl combine Greek yogurt, lemon juice, garlic, 1-2 tbsp. dill, salt and pepper to taste, set aside.
- Prepare the cucumber, tomatoes and onions and add them to the bowl with the chicken.
- Lastly pour the dressing over the chicken and veggies and stir to combine. Serve on pita bread or on top of lettuce.
