Instant Pot Creamy Italian Chicken Pasta Casserole

 We love pasta, and my Instant Pot Creamy Italian Chicken Pasta Casserole is no exception. This Creamy Chicken Pasta Dish is made with juicy chicken sautéed in garlic butter and bound in a creamy Alfredo sauce with peppers, spinach and shredded cheese.

Instant Pot Creamy Italian Chicken Pasta Casserole


INGREDIENTS:

  • 2 tablespoons garlic butter
  • 1 pound of chicken cut into bite sized pieces
  • 1 package of McCormick Alfredo mix
  • 1/2 cups of milk
  • 3 cups chicken broth or stock
  • 1 cup of roasted red peppers
  • 2 cups of fresh spinach
  • 8 ounces of your favorite dried pasta
  • 1-2 cups of your favorite shredded cheese

INSTRUCTIONS:

  1. Set Instant pot to sauté function.
  2. Add the garlic butter.
  3. When it begins to sizzle, add your chicken.
  4. Brown chicken but do not cook all the way through.
  5. If using the alfredo seasoning, add your milk to the mix and whisk together.
  6. Pour into Instant Pot.
  7. If you are using alfredo sauce from the jar, add that here.
  8. Add roasted red peppers and pasta to instant pot.
  9. Give everything a good stir.
  10. Close lid and set instant pot to high pressure and set timer for 20 minutes.
  11. Make sure knob on top is turned to sealing.
  12. When timer beeps, allow pressure to decrease naturally for 15 minutes.
  13. Release remaining pressure by turning knob to venting.
  14. Add spinach and cheese.
  15. Stir in and close lid.
  16. Wait about 10 minutes for the cheese to melt and spinach to wilt.
  17. Serve with some delicious crusty Italian bread!
